Banana Bread
- ½ c. butter, softened
- ¾ c. granulated sugar
- 2 eggs
- 1 ½ c. flour
- ½ tsp. salt
- 1 tsp. baking soda
- 4 ripe bananas
Preheat oven to 325°. Cream together first 3 ingredients. In a separate bowl sift together the dry ingredients. Gradually add the flour mixture to the butter mixture; blend well. Add bananas and mix. Pour into greased and floured 8 x 8-inch loaf pan. Bake at 325° for 30 minutes. Yield: 1 loaf or 12 servings; 215 calories per serving. For extra calories add ½ cup raisins; 233 calories or add ½ cup chopped nuts; 250 calories.
